Based on the Edinburgh Gin Classic flavour profile, rhubarb and ginger are added post distillation to create a true Rhubarb and Ginger Gin bottled at 40%. A balanced gin bursting with natural flavours and aromas. The familiar taste of rhubarb is complemented and lifted by the zing and spice of the ginger which develops into a smooth finish.

How to enjoy this gin
A few raspberries, a basil leaf, tonic and ice. Or try a sweeter fruitier version of a gin sour by mixing the gin with sugar syrup and lemon juice over ice; either drink as a cocktail in a chilled coupe or create a longer pour by topping up with your chosen mixer over ice.

Production
The production of the Edinburgh Gin expressions is spread over two unique distillery sites in Edinburgh. Heads & Tales is both a bar and home to two stills, Flora and Caledonia. Both stills are used to distil a variety of Edinburgh Gin expressions. The second production site is housed in the Biscuit Factory, located a few miles away in Leith. The distillery in the Biscuit Factory houses a large 1000 litre traditional copper pot Hoga Still. The site also features a number of smaller stills, which are used for recipe creation and development before being upscaled at either the Biscuit Factory or Heads & Tales.
