A clean, zesty gin that balances softness with bright citrus. Launched in 2010, this is Edinburgh Gin’s modern London Dry, with a nod to Scotland in its recipe including native plants and botanicals. A unique blend of fourteen botanicals includes lavender, pine buds, mulberries and cobnuts. Orange peel, lemongrass and lime peel contribute lively citrus notes. This is a delightfully crisp gin with a distinctively smooth finish.

    How to enjoy this gin

    For the classic gin and tonic pour, simply pair with a good quality tonic and add to an ice-filled glass with an orange peel garnish. Or try their Sunset Novana, which is simply a generous measure of gin over ice, with one teaspoon of fresh orange juice, one teaspoon of Campari, topped up with tonic water and orange twist.

    Production

    The production of the Edinburgh Gin expressions is spread over two unique distillery sites in Edinburgh. Heads & Tales is both a bar and home to two stills, Flora and Caledonia. Both stills are used to distil a variety of Edinburgh Gin expressions. The second production site is housed in the Biscuit Factory, located a few miles away in Leith. The distillery in the Biscuit Factory houses a large 1000 litre traditional copper pot Hoga Still. The site also features a number of smaller stills, which are used for recipe creation and development before being upscaled at either the Biscuit Factory or Heads & Tales.
